In a house dating from the 16th century and typical of the town, today you will find Café-Restaurant des Remparts where a traditional welcome still awaits you.
Fine fare also awaits the visitor: jambon de campagne (local ham) on a bed of cabbage, creamy fondue au vacherin (fondue with Vacherin cheese), fondue moitié-moitié (fondue with half Vacherin and half Gruyère cheese) or other delicacies made with the unique crème de Gruyères.
This cream is called “hyà” (flower) in the Gruyère dialect, while “fre” (fruit) is none other than the cheese itself, the celebrated ambassador of Gruyère known the world over.
